This boneless pork shoulder roast comes from the lower portion of the front shoulder. It's well-marbled with collagen-rich connective tissue that slowly breaks down during cooking, creating fork-tender meat with rich, satisfying flavor.
Despite the name, pork butt actually comes from the upper shoulder, above the blade bone. It tends to have slightly more marbling and is most popular for pulled pork and carnitas. Pork shoulder is a bit leaner with more connective tissue, and it works well for braising, stewing, and slow roasting. Both shine with time and low heat.
The collagen in this cut needs time and low heat to fully break down. That's what creates the tender, melt-in-your-mouth texture this roast is known for. For slicing, pull it at 145°F. For shredding and carnitas, keep going until the meat pulls apart easily, well above 190°F. Low heat, enough time, and a good rest before shredding are all it takes.

I absolutely love the warm, summer months. But, I have to admit, cooking in the cooler months is my favorite!
