Rack of Lamb vs. Lamb Chops

A rack of lamb is the full set of ribs, roasted whole and carved after cooking, while lamb chops are individual cuts from the rib or loin section cooked separately. The rack gives you a more dramatic presentation and precise doneness; chops are the faster, weeknight-friendly option. If you're feeding a crowd, our leg of lamb is worth a look too.

More Than One Way to Serve It

A whole roast is the simplest option and the most impressive on the table. A full rack with seven or eight ribs serves two to three people as a main course. Slice between the ribs after roasting for individual chops, or tie two racks together into a crown roast of lamb for a holiday centerpiece. Our apple-wood smoked lamb bacon makes a great starter alongside it. 

How to Cook a Rack of Lamb

Season generously, sear cap-side down in an oven-safe pan, then finish in the oven. Use a meat thermometer and pull the rack at 135°F for medium-rare or 145°F for medium. Avoid overcooking, as this cut dries out quickly past medium.

Herb Crust, Marinade, or Simply Seasoned

A classic herb crust of Dijon, garlic, rosemary, and breadcrumbs pressed onto the cap before roasting is always a crowd-pleaser. Common Questions About our 'Frenched' Lamb Rack

It's a rack of ribs with the meat and tissue between the bones removed, leaving them clean and exposed. The result is a visually striking cut that's as elegant on the table as it is straightforward to serve.
Tender and more delicate than other lamb cuts, with a clean, mild flavor that makes it a good starting point if you're new to lamb.
We recommend 135°F for medium-rare, the sweet spot for this cut, or 145°F for medium. Use a meat thermometer and rest for 10 minutes before slicing.
