Roasted Rack of Lamb Recipe

This is Brooks and Catherine's go-to fancy meal, perfect for special occasions and holidays. It pairs well with mashed potatoes, but you can mix and match your favorite sides.

Ingredients
- (1.5 lb) 'Frenched' Lamb Rack
- (2 TBSP) Mayonnaise
- (3-4 TBSP) Spicy Mustard
- (1 tsp) Apple Cider Vinegar
- (Pinch) Salt and Pepper
- (1 tsp) Garlic Powder
- (1 TBSP) Brown Sugar
Directions
How to Make It:
- Preheat oven to 475°
- Line baking sheet with foil
- In a small mixing bowl, add mustard, mayonnaise, garlic, vinegar mix together.
- Lay lamb rack on foil, salt & pepper on both sides.
- Using a brush, coat racks with the mustard mixture then sprinkle brown sugar on top. Cover Lamb Rack with foil.
- Bake at 475 degrees for 10 min. Remove foil
- Flip over and bake for another 10 min at 400
- Let *REST* for 10 mins
