Rosemary Dijon Chicken Thighs

Ingredients
- (4) Boneless Skinless Chicken Thighs
- (1Tbs) Salt
- (1 Tbs) Ground Black Pepper
- (2 Tbs) Grass-fed Butter
- (1/2 Cup) Chopped Shallot
- (3 Cloves) Minced Garlic
- (2 Tbs) Dijon Mustard
- (2 Tsp) Honey
- (2 Tsp) Freshly Chopped Rosemary Sprigs
- (1 Cup) Sour Cream
- (1/4 Cup) Heavy Cream
Directions
- Begin by patting the chicken thighs dry, then season both sides liberally with salt and ground black pepper.
- Bring a skillet to medium heat, melt the butter and add in your chicken. Cook each side for about 3 minutes or until browned. Remove chicken from skillet and set aside.
- Reduce heat to medium low and add in the shallot and minced garlic. Cook until fragrant.
- Deglaze the skillet with apple cider vinegar (can substitute white wine), then stir in the Dijon mustard and honey.
- Toss in the chopped up rosemary, then stir in the sour cream until the sauce comes together.
- Finally, return the chicken to the skillet and allow to simmer until fully cooked.
- Serve immediately with side of choice.
