Bacon Jam Pork Sliders with Dill Pickle Slaw

Ingredients
- (1lb) Ground Pork
- (1 package) - Pork Bacon (Sugar Free) -
- (6) Slider or Hamburger Buns
- (1 large) Egg
- (2 TBS) Grass Fed Butter
- (2 TBS) Onion Powder
- (2 tsp) Garlic Powder
- (2 tsp) Salt
- (2 tsp) Ground Black Pepper
Directions
For the Bacon Jam:
INGREDIENTS:
- 1lb Bacon
- 2 cups sweet onion, peeled and diced
- 1/2 brown sugar
- 1/4 cup apple cider vinegar
- 2tbs balsamic vinegar
- 2tbs maple syrup
DIRECTIONS:
- Add the chopped bacon to a skillet and cook over medium heat until crispy, stir occasionally. Transfer bacon to a lined dish to drain. Reserve approximately 2tbs of the bacon grease in the skillet.
- Add the onion to the hot bacon grease and stir to coat well. Reduce heat and stir occasionally. Cook until the onions are caramelized, about 25 minutes.
- Add in the brown sugar, apple cider vinegar, balsamic vinegar, and maple syrup to the skillet. Bring to a simmer and cook for 15 minutes.
- Add the bacon back in and continue to simmer for an additional 10-15 minutes, stirring occasionally. Simmer until thick and bubbly. NOTE: jam will thicken more as it cools.
For the Dill Pickle Slaw:
INGREDIENTS:
- 1 cup shredded coleslaw mix
- 1/2 mayonnaise
- 2 tbs pickle juice
- 1/4 dill pickles, diced
- 1/4 cup fresh dill, chopped
- salt and pepper to taste
DIRECTIONS:
- Mix all ingredients in a small bowl.
For the Pork Sliders:

- Mix ground pork, egg and spices in a medium sized bowl until combined. Form six equal sized slider patties.
- Bring a skillet to medium heat and melt butter. Cook each patty for around 5 minutes each side or until cooked through.
- Assemble your sliders by placing the patty on the bun, then topping with bacon jam and then slaw. Add desired condiments such as mayo, mustard, barbecue sauce. Enjoy!
