A Few Tips for Cooking Grass-Fed Bison

Bison is leaner than beef, so it cooks faster. For best results, use moderate heat and cook to an internal temperature of 145°F, then let it rest for at least three minutes before cutting. Pan-searing in a cast-iron skillet builds a great crust, while high-heat grilling gives you impressive char marks.
