Regenerative Potato Harvest — FAQs

Yes. Our potatoes are grown on land that is certified organic—but we go beyond organic standards. For three years prior to planting potatoes, the fields are planted in cover crops and perennials and grazed by cattle to restore soil biology and fertility.
Potatoes are planted only after three years of pasture rest and cattle grazing. The cattle naturally fertilize the soil, improve structure, and stimulate microbial life. This restorative period builds deep soil health before a single potato is planted. It’s slower. It’s more work. And it creates better flavor.
Fertility comes from:
• Cattle manure
• Compost
• Cover crops

We do not rely on synthetic fertilizers. The goal is living soil, not chemical feeding.
Weeds are managed through:
• Tine weeding
• Mechanical cultivation

No herbicides are used. It takes more labor, but it protects soil life and long-term field health.
We use a biological approach. Fields are intercropped with flowering plants like buckwheat and field peas. These attract beneficial insects that prey on pests naturally. We also focus on growing nutrient-dense plants (high brix, balanced nitrogen), which are naturally more resilient. There are organic-approved pesticides available, but we’ve only needed them once in five years—and only during extreme weather imbalances.
We focus on plant health first. Natural inputs like fish extracts and epsom salt are used to strengthen plant resilience and support natural resistance. Healthy soil grows stronger plants. Stronger plants resist disease.
No. Our potato vines are mowed before harvest. They are never sprayed with chemical desiccants.
No synthetic sprout inhibitors are used. Sprouting is controlled through proper temperature management and, when needed, clove oil—which you may occasionally smell on the potatoes. Clove oil is a natural storage aid and safe for use.
Potatoes are a living food. Without synthetic inhibitors, they may naturally sprout over time, especially if stored in warmer conditions. Sprouting does not affect safety or quality. Simply trim the sprouts before cooking.
