Ingredients
- (2 lbs) Chicken Hearts
- (3 TBSP) Extra virgin olive oil
- (3 cloves) Garlic, minced
- (1 lemon) Juice and zest
- (1 TBSP) Fresh rosemary, finely chopped
- (1 TBSP) Fresh thyme, finely chopped
- (1 TSP) Smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped

How to Cook Chicken Hearts
- Prep the Chicken Hearts: Trim any excess fat or bits of connective tissue, then rinse the chicken hearts under cold water and pat dry with paper towels. This will help get a nice char on the grill.
- Make the Marinade: In a large mixing bowl, whisk together the extra virgin olive oil, minced garlic, lemon juice, and lemon zest. Next, stir in the rosemary, thyme, smoked paprika, salt, and pepper.
- Marinate: Toss the chicken hearts into the marinade and give them a good stir so they’re evenly coated. Cover the bowl and let chill in the refrigerator for at least an hour. If you’ve got time, let the hearts marinate longer to really let the flavors soak in.
- Preheat the Grill: When you’re ready to cook, turn the grill to medium-high heat.
- Skewer the Hearts: Put the marinated chicken hearts onto skewers, spacing them so they cook evenly. If using wooden skewers, soak them in water for about 30 minutes before use to prevent burning.
- Grill: Place the skewers on the grill and cook for 5-7 minutes per side. You’re aiming for a charred exterior and an internal temperature of 165°F. Watch them closely as they cook fast!
- Rest and Garnish: Once the chicken hearts are ready, remove them from the grill and let rest for a few minutes. Don’t skip this step! Resting the chicken helps the juices redistribute, keeping them moist and tender.
- Serve and Enjoy: Sprinkle the hearts with freshly chopped parsley and serve alongside a fresh salad and your choice of grains. This dish is especially delicious when served with a dollop of tzatziki and hummus.
