Herbed Golden Potatoes with Fennel

Ingredients
- (1 bulb) Fennel
- (1 cup) Freshly Chopped Parsley
- (2 TBS) Lemon Juice
- (2 TBS) Grass-Fed Butter
- (1/4 cup) Olive Oil
- (1 TBS) Black Pepper
- (3 lbs) Regenerative Potato Box
Directions
1 . Start by halving the potatoes, and place them into a pot of boiling water with some salt.
2. Slice the fennel into thin, angled slices. Once the potatoes are nearly fork-tender, add in the fennel. Boil until the fennel is nice and tender.
3. Drain the water from the pot. Add in a handful of freshly chopped parsley, lemon juice, butter, olive oil, and ground black pepper. Give the mixture a nice stir, and gently mash the potatoes into the fennel.
4. Serve alongside your favorite protein!
