Ingredients

  • (8 small) Red Potaoes
  • (4 TBS) Grass-Fed Butter
  • (1/3 cup) Grated Parmesan Cheese
  • (1 tsp) Onion Powder
  • (1 tsp) Garlic Powder
  • (1/2 tsp) Salt
  • (1/2 tsp) Ground Black Pepper
  • (2 TBS) Olive Oil

Directions

1 . Preheat the oven to 400 degrees

2. In a 9x13 baking dish, combine melted butter, grated parmesan cheese and spices. Mix well. 

3. After the potatoes have been washed, halve them. Then, score the inside by slicing thin horizontal and vertical lines (be sure not to slice too deeply, as this will result in the potato falling apart during the baking process). 

4. Place the potatoes, sliced side down, into the butter and cheese, arranging them neatly in the dish. Drizzle the top with a little olive oil.

5. Bake for 35-40 minutes, or until the edges around the potatoes are golden brown. 

6. Remove from the oven and wait a few minutes for the potatoes to cool before removing them - this will give the cheese time to solidify and stick better. Serve with your favorite choice of dipping sauce!
