If you take the lead on big family meals, this is the cut you need. A whole leg of lamb is one of the largest roasts we offer, with bold flavor and enough to feed a full table.
Leg of lamb is cut from the hind leg of the animal. It's one of the largest cuts available, known for its bold flavor and how well it holds up to a long, slow roast. When a full roast is more than you need, our ground lamb makes a great weeknight alternative.
Grass-fed leg of lamb has a rich, savory flavor that deepens as it roasts. It's tender and sliceable, and a whole leg on a platter has a presence that needs no introduction. We love it for Sunday dinners with the family and holidays when we want something worth gathering around.
In our experience, bone-in leg of lamb delivers slightly more flavor during roasting, though it takes a bit more patience to carve at the table. Boneless is the more flexible option; it can be butterflied and grilled, or tied and roasted just like the bone-in. Both are excellent, so it really comes down to how you plan to cook and serve it.
Leg is leaner and ideal for roasting whole, with tender, sliceable results that hold up well on a platter. Lamb shoulder has more connective tissue and is better for low-and-slow braising until tender and falling apart. If you want a roast that holds its shape on a platter, leg is your cut. We love a classic slow roast at 325°F, which gives you tender, sliceable meat all the way through. If you prefer a browned crust with a softer center, a high-heat finish works well too. Either way, let it rest before carving so the juices settle. We've enjoyed it served with roasted root vegetables and a red wine pan sauce many times, and it never disappoints.
This cut has the surface area to really soak up a marinade, so the longer you let it sit, the better. Rosemary, thyme, and garlic make a classic rub, or go Greek-style with lemon and oregano. Our applewood-smoked lamb bacon is a great addition to complete the spread.
