Common Questions About our Beef Filet Mignon Steak

Filet mignon is cut from the tenderloin, a muscle that runs along the spine and does very little work during the animal's life. That's what makes it so tender. Fine-grained, buttery, and soft enough to cut with a fork. It's boneless, typically around 6 oz, and one of the most prized cuts on the animal.
A cast-iron sear with butter and herbs, finished in a 400°F oven, is our favorite method. Grilling works well, too. Bring your steak to room temperature for 30 minutes, pat it dry for a better crust, and season simply with salt and pepper. Grass-fed cooks roughly 25% faster than conventional, so use a meat thermometer and pull it a few degrees early. It will rise about 5°F during the rest.
Pull at 125 to 130°F for medium-rare, or 130 to 135°F for medium. Let it rest five minutes before cutting. Carryover cooking during that rest adds about 5°F, so factor that in before you pull it off the heat.
Grass-fed has a more intense flavor where grain-finished tends to be milder and fattier. It's naturally leaner and cooks faster, so lower heat matters. Our cattle, and every partner farm we work with, are raised without hormones, antibiotics, or GMO feed.
