How to Cook the Perfect Garlic and Herb Roasted Pork Bones

  1. Prep the pork bones: Rinse the pork bones under cold water, then pat them dry with paper towels.
  2. Turn the oven on: Preheat your oven to 375°F.
  3. Season and arrange: Place the pork bones into a large roasting pan. Drizzle olive oil over them and season generously with salt and pepper. Make sure the bones are well-coated by massaging the seasoning in.
  4. Add veggies: Toss in the quartered onion, crushed garlic, chopped carrots, and celery. Use your hands or a spoon to mix everything, ensuring vegetables are evenly distributed around the bones.
  5. Roast: Place the pan in your oven and roast for 30 minutes. Remember to stir everything halfway through so everything browns evenly.
  6. Mix in tomato paste: Take the pan out of the oven and mix in the tomato paste, coating all the bones and veggies.
  7. Deglaze (optional): Pour in some red wine to deglaze the pan. Use a wooden spoon to scrape up all those tasty browned bits stuck to the bottom.
  8. Add broth and herbs: Pour your chicken or beef broth in and add the rosemary and thyme sprigs for extra flavor.
  9. Roast again: Return the pan to the oven and roast for another hour—baste occasionally with the pan juices to enhance the meat’s tenderness.
  10. Finish and serve: Remove the pan from the oven and discard the rosemary and thyme sprigs. Garnish the dish with freshly chopped parsley. Serve alongside creamy mashed potatoes, fluffy whole-grain rice, or roasted root vegetables.
