Healthy Grilled Chicken Hearts Recipe
If you want to try something different on the grill this summer, try this delicious grilled chicken hearts recipe. Yes, you read that right: chicken hearts! This meat cut is super tender, deliciously meaty, and perfect for grilling. Once you try this recipe, you’ll be wondering why you waited so long!

Ingredients

  • (2 lbs) Chicken Hearts
  • (3 TBSP) Extra virgin olive oil
  • (3 cloves) Garlic, minced
  • (1 lemon) Juice and zest
  • (1 TBSP) Fresh rosemary, finely chopped
  • (1 TBSP) Fresh thyme, finely chopped
  • (1 TSP) Smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped

How to Cook Chicken Hearts

  1. Prep the Chicken Hearts: Trim any excess fat or bits of connective tissue, then rinse the chicken hearts under cold water and pat dry with paper towels. This will help get a nice char on the grill. 
  2. Make the Marinade: In a large mixing bowl, whisk together the extra virgin olive oil, minced garlic, lemon juice, and lemon zest. Next, stir in the rosemary, thyme, smoked paprika, salt, and pepper. 
  3. Marinate: Toss the chicken hearts into the marinade and give them a good stir so they’re evenly coated. Cover the bowl and let chill in the refrigerator for at least an hour. If you’ve got time, let the hearts marinate longer to really let the flavors soak in.
  4. Preheat the Grill: When you’re ready to cook, turn the grill to medium-high heat.
  5. Skewer the Hearts: Put the marinated chicken hearts onto skewers, spacing them so they cook evenly. If using wooden skewers, soak them in water for about 30 minutes before use to prevent burning.
  6. Grill: Place the skewers on the grill and cook for 5-7 minutes per side. You’re aiming for a charred exterior and an internal temperature of 165°F. Watch them closely as they cook fast! 
  7. Rest and Garnish: Once the chicken hearts are ready, remove them from the grill and let rest for a few minutes. Don’t skip this step! Resting the chicken helps the juices redistribute, keeping them moist and tender. 
  8. Serve and Enjoy: Sprinkle the hearts with freshly chopped parsley and serve alongside a fresh salad and your choice of grains. This dish is especially delicious when served with a dollop of tzatziki and hummus. 

What Is the Best Way to Cook Chicken Hearts?

Chicken hearts are small, delicate pieces of meat best cooked quickly. Either pan fry or grill them for 5-7 minutes over medium-high heat. You’ll know they’re ready when they reach an internal temperature of 165°F.

Bacon Jam Pork Sliders with Dill Pickle Slaw

I had heard of this thing called bacon jam a couple years ago and it definitely intrigued me. Don’t ask me why it took me that long to actually make it myself - trust me, after tasting it, I’m wondering the same thing. Bacon jam is a great and simple way to elevate the flavor of your recipes. In this case, I am using it as a topper for my pork sliders. Pork and more pork. Need I say more? It’s the perfect balance between sweet and savory. The caramelized texture and rich flavor makes it the best condiment for so many different dishes, sweet and savory alike. Pro tip, put it on top of some vanilla ice cream and your life will be complete. Bacon jam is technically a relish, so store it in an air tight jar in the refrigerator and enjoy for weeks to come. And you WILL enjoy it! This recipe is one of a kind and a combination of some of my favorite flavors. You really can't go wrong with bacon or dill pickle, am I right? The slaw really brings a refreshing element to this recipe and in my opinion completes it, but if it's not your gig, you can do away with it. I used ground pork and made small patties for this recipe, but you can most certainly substitute pulled pork as well. With that said, get to cooking so you can get to eating! Enjoy!
