Chicken Chorizo Tacos with Mango Salsa
Indulge in this spicy and tangy taco recipe, featuring one of our newest products, Chicken Chorizo! While chorizo can be used in a variety of dishes, with its cured and seasoned elements, I find using it for tacos is superior. While the chorizo is the star in this dish, let's not overlook the home made mango salsa. It may be the most time consuming part of this recipe, but it is worth it. The freshness and acidity compliments the spice of the chorizo so well. These flavors are sure to leave your mouth watering for more after each bite!

Ingredients

  • (6) Flour Tortillas
  • (2) Ripe Mangos
  • (1) Jalapeño or Serrano Pepper
  • (1) Red Bell Pepper
  • (1) Red Onion
  • (From 2 limes) Lime Juice
  • (4) Garlic Cloves, minced
  • (1/4 cup) Chopped Cilantro
  • (3 tbs) Tajin Seasoning
  • (1/2 cup) Cojita Cheese
  • (1/4 cup) Sour Cream
  • (1 pkg) Chicken Sausage - Chorizo

Directions

  1. Assemble the produce needed for the salsa and begin dicing to your desired size. 
  2. In a small bowl, add in the chopped produce, lime juice, and Tajin seasoning. Mix well and set aside to marinate. 
  3. While the salsa is developing flavor, bring a pan to medium heat and cook the chorizo until done. No need to season!
  4. Assemble the taco with the chorizo, mango salsa, sour cream and cheese. Top with a little bit of fresh cilantro and you're ready to dig in!
