Our marrow bones come from cattle that eat nothing but grass—no grain finishing, ever. This grass-fed diet, combined with rotational grazing on our regenerative pastures, produces bones rich in omega-3 fatty acids with a clean nutritional profile. Marrow bones are cut to expose the nutrient-rich marrow inside, making them ideal for extracting healthy marrow, or creating rich, gelatinous broth. Our soup bones typically include more connective tissue and meat, which adds body and flavor to broths and stews. Many home cooks use both together for the most flavorful, nutrient-dense broth possible.
For roasted marrow, place the bones cut-side up in a roasting pan at 450°F until the marrow softens and begins to pull away from the bone. For bone broth, we recommend simmering the bones in water with a splash of vinegar for 12-24 hours to extract maximum nutrients and flavor. The longer cooking time helps break down the collagen into gelatin, creating a broth that's both nourishing and satisfying.
