Cottage Bacon, Egg, and Cheese Breakfast Sandwich
Cottage Bacon is cut from the Pork Shoulder, its larger in size, has a rich fatty taste, and the meat portion of it tastes very rich, much like the red ham from around the bone. Step 1 - Cook the bacon in a skillet or bake in the oven until the desired doneness is achieved

Step 2 - Cook the two eggs over easy, leaving the yolk just slightly under cooked

Step 3 - Put the cooked bacon into the skillet, place the eggs on top, then place your two slices of cheese and allow them to melt

Step 4 - Use a spatula to scoop the bacon, eggs, and cheese from the pan and place onto a freshly sliced croissant.
