Ingredients

  • (2 Lbs) Chicken Feet
  • (4 Cloves) Garlic, minced
  • (1-inch piece) Ginger, minced
  • (2 TBSP) Soy sauce (low sodium)
  • (2 TBSP) Oyster sauce (optional, use a low-sodium variety)
  • (1 TBSP) Rice wine (or dry sherry)
  • (1 TBSP) Hoisin sauce
  • (1 TSP) Sesame oil
  • (1 TBSP) Honey or maple syrup
  • (1 Cup) Seven Sons Chicken Broth
  • (1) Red chili, sliced (optional, for heat)
  • (2) Green onions, chopped (for garnish)
  • Fresh cilantro, chopped (for garnish)
  • (1 TBSP mixed with 2 TBSP) Cornstarch for thickening

How to Cook Chicken Feet Chinese Style

  1. Prepare the chicken feet: Rinse the chicken feet under cold water, trimming the nails with kitchen shears. Skip this step if you bought your chicken feet from Seven Sons, as we clean them for you! 
  2. Soak: Place the chicken feet in a bowl of cold water and let them soak for 1 hour. Once soaked, drain the water and pat the chicken feet dry.
  3. Blanch: Bring a pot of water to a boil. Add the chicken feet and blanch for 5 minutes. After blanching, drain and rinse the chicken feet under cold water to cool.
  4. Prepare the marinade: In a large bowl, mix the minced garlic, minced ginger, soy sauce, oyster sauce, rice wine, hoisin sauce, sesame oil, and honey or maple syrup. This will be the flavorful base for the chicken feet.
  5. Marinate: Add the blanched chicken feet to the marinade and toss, coating them evenly. Let the chicken feet marinate for at least 30 minutes to absorb all the flavors.
  6. Steaming: Transfer the marinated chicken feet to a heatproof dish that fits inside your steamer. Pour the chicken broth into the dish to keep the chicken feet moist and flavorful as they cook.
  7. Steam: Place the dish inside the steamer and cover. Steam the chicken feet over simmering water for 1.5 hours, or until they are tender and the flavors have fully developed. Be sure to check the water level in the steamer periodically and add more if necessary.
  8. Optional sauce thickening: If you prefer a richer sauce, remove the chicken feet from the steamer and transfer the liquid to a small saucepan. Bring the liquid to a simmer and stir in a cornstarch mixture to thicken it.
  9. Final touches: Pour the sauce over the chicken feet, if desired. Garnish with sliced red chili, chopped green onions, and fresh cilantro for added freshness and a bit of color.
  10. Serve: Serve the steamed chicken alone as an appetizer, or alongside steamed jasmine rice for an entree.
