Ground Bison Tacos with Clean Ingredients
Tacos, but make it next level! If you ask any one of the seven sons what their favorite meal is, they'll tell you that tacos are definitely in their top five! But these bison tacos especially hit different. They are everything you want a taco to be; crispy, melty, with the perfect amount of spice. But best of all, they are healthy and full of flavor, without using the taco seasoning packets that contain additives and preservatives!

Ingredients

  • (1 LB) Ground Bison
  • (2 TBS) Olive Oil
  • (2 tsp) Chili Powder
  • (1 tsp) Cumin
  • (1 tsp) Paprika
  • (2 tsp) Salt
  • (1 tsp) Black Pepper
  • (2 minced) Garlic Cloves
  • (2 TBS chopped) Cilantro
  • (2) Poblano Peppers (deseeded and diced)
  • (1 diced) Onion
  • (6-8) Corn or Flour Tortillas
  • (2 Cups) Shredded Cheddar Cheese
  • (for serving) Lime Wedges
  • (for serving) Sour Cream
  • (for serving) Shredded Lettuce
  • (1 Large and ripe) Avocado
  • (1 deseeded and diced) Jalapeno
  • (1/2 Cup) Water
  • (1/4 Cup chopped) Fresh Cilantro
  • (1 TBS) White Vinegar
  • (1 tsp) Salt

Directions

  1. Add the avocado, jalapeño, water, cilantro, vinegar and salt to a food processor and blend until smooth. Cover and store in the refrigerator until you're ready to serve. 
  2. Bring a skillet to medium heat and coat with oil. Add in the diced onion, poblano peppers, and minced garlic, and cook until fragrant. Add in the ground bison, mix well. Then add in your spices: chili powder, cumin, paprika, salt, black pepper. 
  3. While your taco meat is cooking, preheat your oven to 425 degrees. Start preparing the shells. Lay the tortillas (you can use corn or flour here) on a prepared baking sheet with parchment paper and coat both sides with olive oil. Bake them for 2-3 minutes, just so they're soft enough to fold. 
  4. Layer each shell on one side with shredded cheese, and then the meat mixture. Fold the other side of the tortilla over the filling and press down firmly. 
  5. Once you have the desired amount of tacos made, place them in the oven for about 15 minutes or until golden brown and cheese is melted. 
  6. They are ready to serve with the salsa and sour cream (optional). Enjoy!

Bacon Jam Pork Sliders with Dill Pickle Slaw

I had heard of this thing called bacon jam a couple years ago and it definitely intrigued me. Don’t ask me why it took me that long to actually make it myself - trust me, after tasting it, I’m wondering the same thing. Bacon jam is a great and simple way to elevate the flavor of your recipes. In this case, I am using it as a topper for my pork sliders. Pork and more pork. Need I say more? It’s the perfect balance between sweet and savory. The caramelized texture and rich flavor makes it the best condiment for so many different dishes, sweet and savory alike. Pro tip, put it on top of some vanilla ice cream and your life will be complete. Bacon jam is technically a relish, so store it in an air tight jar in the refrigerator and enjoy for weeks to come. And you WILL enjoy it! This recipe is one of a kind and a combination of some of my favorite flavors. You really can't go wrong with bacon or dill pickle, am I right? The slaw really brings a refreshing element to this recipe and in my opinion completes it, but if it's not your gig, you can do away with it. I used ground pork and made small patties for this recipe, but you can most certainly substitute pulled pork as well. With that said, get to cooking so you can get to eating! Enjoy!
