Tender Beef Heart Stew Recipe
Beef heart is nutritional, and has a rich, meaty flavor. While grass-fed beef heart is a less common cut of beef, like other organ meats, it can make a delicious and nutrient-packed addition to your table. All you’ll need is a few ingredients and a slow cooker, and you’re ready to go.

Ingredients

  • (2 lbs, trimmed and cut into 1-inch cubes) Beef Heart
  • (1) Large onion, chopped
  • (2) Cloves garlic, minced
  • (3) Carrots, chopped
  • (1) Cup beef broth
  • (1 TSP) Cumin
  • (1 TSP) Paprika
  • (1 TSP) Oregano
  • (1 TSP) Cornstarch
  • (1 TBSP) Butter
  • Extra virgin olive oil
  • Fresh parsley, chopped

Directions

How to Make Beef Heart Stew

  1. Rinse the beef heart under cold water. Trim any fat, connective tissue, and valves. 
  2. Marinate the beef heart: Using a resealable plastic bag, marinate the beef heart in the juice of half a lemon, a few generous tablespoons of extra-virgin olive oil, and salt and pepper. Leave for at least an hour. The longer, the better!
  3. Remove beef heart from the marinade. Use a sharp knife to dice the beef heart into 1-inch cubes. Place the cubes in the slow cooker along with the onions, minced garlic, and carrots. 
  4. Add the beef broth and butter: Then, season the mixture with salt, pepper, cumin, paprika, and oregano.
  5. Cover and cook: Cook on high for 4 hours.
  6. Mix cornstarch with water: In a separate bowl, mix the cornstarch with a tbsp of water to create a slurry. Add to the slow cooker near the end of the cooking time and stir. 
  7. Transfer to plate: Once cooked, put the beef heart stew in bowls, garnish with parsley, and serve.

  • You can keep any leftovers in the fridge for up to 4 days. You can also store them in the freezer for up to 3 months.

I had heard of this thing called bacon jam a couple years ago and it definitely intrigued me. Don’t ask me why it took me that long to actually make it myself - trust me, after tasting it, I’m wondering the same thing. Bacon jam is a great and simple way to elevate the flavor of your recipes. In this case, I am using it as a topper for my pork sliders. Pork and more pork. Need I say more? It’s the perfect balance between sweet and savory. The caramelized texture and rich flavor makes it the best condiment for so many different dishes, sweet and savory alike. Pro tip, put it on top of some vanilla ice cream and your life will be complete. Bacon jam is technically a relish, so store it in an air tight jar in the refrigerator and enjoy for weeks to come. And you WILL enjoy it! This recipe is one of a kind and a combination of some of my favorite flavors. You really can't go wrong with bacon or dill pickle, am I right? The slaw really brings a refreshing element to this recipe and in my opinion completes it, but if it's not your gig, you can do away with it. I used ground pork and made small patties for this recipe, but you can most certainly substitute pulled pork as well. With that said, get to cooking so you can get to eating! Enjoy!
