Well, this tuna is known as "brown" tuna (a representation of its real color) as we chose to only carry tuna that is 100% Carbon Monoxide FREE, 100% "Tasteless Smoke" FREE, sustainably fished and wild caught.
The tuna that you've likely experienced previously is almost certainly Carbon Monoxide treated fish (a.k.a. Tasteless Smoke). It's quite common that tuna loins are treated with the gas to prevent oxidation, thus altering its cosmetic appearance (retaining the pink color).
It's completely normal for a fresh piece of tuna to lose its red color and turn brown over a period of a few days once being exposed to the air. Rest assured this tuna is of high quality, flash frozen and ready to enjoy.
This tuna is not sashimi grade tuna and therefore is recommended to be cooked.
