3-Ingredient Gluten-Free Banana Pancakes

Made with just eggs, bananas, and buckwheat flour these pancakes make a healthy protein packed breakfast.

Buckwheat, unlike it’s name would have you believe, is actually not related to wheat. In fact, it’s not even a grain but a fruit seed related to rhubarb and sorrel. Buckwheat is a good source of protein containing all 8 essential amino acids. 

 

These banana pancakes are a healthy breakfast that the kids love. Made with only three ingredients, they are easy to whip up even on busy mornings. 

 

Banana Pancakes 

Prep time: 5 minutes

Servings:  about twelve 4 inch pancakes.

 

Ingredients:

4 large pasture raised eggs

2  large bananas 

3/4 cups buckwheat flour

 

Directions:                

Pre-heat a skillet on medium heat.

Place all ingredients in a blender and mix on high until smooth.

Pour batter onto hot skillet to make the desired size pancake. 

When batter starts to bubble and set around the edges, flip and cook for a little longer until done.

 

Make these pancakes extra delicious by topping with organic butter and real maple syrup!
