Every once in a while you just need a cookie. Since these Chocolate Chip Oatmeal Cookies are made with gluten free oats and sweetened with honey they make a great snack when you need a little extra energy or when you just feel like something sweet! They also make an excellent quick grab-and-go breakfast. Although they are not exactly a nourishing traditional breakfast I would definitely choose homemade cookies over highly processed boxed cereal any day if I don’t have time to cook. I like to bake half of the dough when I make it and freeze the the rest. I just make a log with the dough then roll it in some plastic wrap and freeze. Then when I want fresh baked cookies without all the work I just get the dough out of the freezer, slice it and bake. Fresh baked cookies in about 10 minutes!
- 1/2 cup softened butter, or coconut oil to them make dairy free.
- 1 cup honey 1/4 cup organic molasses
- 2 cups organic peanut butter
- 3 free range eggs
- 1 tsp vanilla extract
- 4 1/2 cups gluten free oats
- 2 tsp baking powder
- 1/2 tsp sea salt
- 1 cup organic chocolate chips (or gluten free chocolate chips)
- 1/2 cup shredded coconut (optional)
Preheat oven to 350° Cream butter, honey and molasses. Add eggs, peanut butter and vanilla. Mix well. Add oats, baking powder and salt. Mix well. Stir in chocolate chips and shredded coconut. Drop dough with a spoon or a cookie scoop onto a cookie sheet. Bake for bake for 10-12 minutes. Let them cool on the cookie sheet for a few minutes before transferring.
